Ingredients to make delicious stuffed termite:

 1½ kilograms of bovine termite

 200 grams of cubed bacon

 200 grams of diced provolone cheese

 1 unit of pepperoni sausage in cubes

 salt

To marinate:

 2 red-season envelopes

 6 cloves of garlic

 ½ cup soy oil

 ½ cup dry white wine

 2 bay leaves

 1½ teaspoons of cayenne pepper (optional)

 Black pepper

How to make delicious stuffed termite:

To ensure that your stuffed termite is very tasty, start by preparing the seasoning in which it will marinate: blend the respective ingredients in a blender, with the exception of the bay leaf.

Then, using a sharp knife, drill several deep holes in the termite. In each of these holes place pieces of bacon, provolone and sausage, pressing well.

Place the termite in a plastic bag large enough to accommodate it, add the blender seasoning and bay leaves and tie, closing very well. Place in a container and set aside in the refrigerator overnight to get the flavor.

Tip: From time to time, turn the bag with the meat upside down, so that the seasoning spreads all over the piece.

On the day of cooking the termite, spread salt all over the piece and wrap it very well in several sheets of aluminum foil, pressing well so that it is well closed and the meat roasts in its own fat. Place on a baking sheet and bake at 160ºC for 5 hours.

After the indicated time, remove the aluminum sheets and take the termite back to the oven, now at 200ºC and for another 15-20 minutes, just to brown. Let the delicious stuffed termite rest for a while before slicing and serve with plain white rice, gratin vegetables or mashed potatoes.
